A traditional method fermentation using Gamy from the Mutch Vineyard on the Cawston Flats just below our winery. Naturally fermented Gamay was aged in neutral oak barrels for 3 months before a secondary fermentation inoculation in bottle. fermented dry with zero dosage and only a tiny amount of sulphites added at disgorging. Unfined and unfiltered. This has Cawston written all over it! Only 139 cases produced
